Sweet Potato Wedges with Lime Mayo is an indulgent way to enjoy roasted sweet potato wedges. The sourness and acidity of Lime Mayo nicely offsets the spicy sweetness of the sweet potato wedges. This dish is a nice alternative to a baked potato or french fries.

Sweet Potato Wedges with Lime Mayo

Makes 4 Servings
3 sweet potatoes, peeled, each cut lengthwise into 8 wedges
2 Tbsp vegetable oil
Freshly ground black pepper
1 tsp cayenne pepper
1/3 cup mayonnaise
¼ tsp finely grated lime zest
2 tsp fresh lime juice
Chopped fresh cilantro
Preheat oven to 450F.
Toss sweet potatoes and oil on a foil-lined large rimmed baking sheet; season with salt, pepper and cayenne.
Roast, turning once, until golden brown and crisp, 25 – 30 minutes.
Meanwhile, whisk mayonnaise, lime zest and juice in a small bowl.
Season fries with salt, top with cilantro, and serve with lime mayo for dipping.
